Yummm… A Chicken Tortilla Soup Recipe
Ok yall! I have done it! A Chicken Tortilla Soup Recipe that will have your family asking for seconds, maybe even thirds!
I can honestly say I have probably the most pickiest eaters ever. Three little girls who will collectively agree on three foods. Chicken nuggets, Mac n cheese, and Pizza. Not that those can be categorized as bad. But, when you have them E V E R Y W E E K anything different seems to be a welcome treat. My husband and I have resorted to making two meals every night, one for the girls and one for us. This has not only become a nuisance but HELLO…its not prectical. How we got started with this, Ill never know.
As a busy stay-at-home mom I’m always searching for quick and easy meals…think 3o minutes from start to finish. I can credit the Instant pot with most of the quick time frame, the other is just the ease of ingredients. The great news is. You probably already have these staples at home!
Enough of my rambling…here it is!!!

Chicken Tortilla Soup
Ingredients
- 3 Chicken Breasts
- 6 cups Chicken Broth
- 1 can Hot Rotel
- 1 can Corn
- 1/4 Onion
- 2 tsp Minced Garlic
- 1 tsp Paprika
- 1 tsp Salt
- 1 tsp Pepper
- 1 tbsp Chili powder
Garnish
- Avocado
- Jack Cheese
- Cilantro
- Tortilla Strips
Instructions

Cook Chicken Breasts and Chicken Broth in Instant Pot. (Poultry setting)

Shread chicken in broth when cooked

Add Spices, Rotel & Corn. Cook in Instant pot for another 5 minutes

Serve hot with Garnish of Choice
